Sweet & Sour Green Beans

Well, it's the end of July! You got Green Beans coming out of your ears???

Here's a blend of a couple recipes that I tried tonight using fresh green beans.. Yummy!!!

Sweet & Sour Green Beans

8 strips bacon
1 sm. onion, chopped
3/4 c. sugar
l lb fresh green beans
1/2 c. vinegar
1 clove garlic; minced
1 pinch red pepper flakes
1/2 Red Bell Pepper; chopped, large pieces

1. Clean green beans by removing ends, and snapping to size (or cook whole).
Boil in salted water for 20 minutes (which should make them perfect if they are not over grown)

2. Fry 4 strips bacon in saucepan until crisp.

3. Remove bacon to drain. Remove fat from bacon and chop or crumple meat and set aside.

4. Saute small onion & garlic chopped in bacon drippings until translucent. About 1/2 way through the cooking process add the bell pepper pieces.  Cook the bell pepper until it's just still a little bit firm.

5. In a separate sauce pan mix vinegar, sugar, and red pepper flakes and bring to a boil. Stir occasionally, making sure that the sugar dissolves. 

6. When green beans are cooked, drain them.

7. Add onions, garlic, bell pepper mixture to the beans and stir.

8. Add veggie mixture to the vinegar/sugar mixture and stir. 

9. Add bacon crumbles to top of beans just before serving.
